
School is coming to an end that I think, for most, is far from bittersweet. Instead, it is intensely sweet, rich and delectable, the most divine dessert at the end of a long and occasionally arduous meal.
The tantalizingly warm spring air and lightened spirits only make me salivate more for this sweet end. To quote the Starland Vocal Band, “Thinkin’ of yous working up my appetite, lookin’ forward to a little afternoon delight.”
In my attempt to embody the excitement of the impending end of school, I created an outrageousely delightful treat: Grace Delight. It is kind of like an afternoon delight: sweet, its full of peanut butter and covered in chocolate, and you do not have to wait until the “the middle of the cold dark night” to enjoy it.
Grace Delight will definitely set your “sky rockets in flight,” and leave you singing “Grace Delight! Grace Delight!” Let Grace Delight be the afternoon delight to the remaining two weeks left of school. As the song says, “My motto’s always been; when it’s right, it’s right.” Grace Delight, a layer of peanut-butter cheesecake swirled brownies topped with chocolate chip cookie dough frosting and drizzled with chocolate, is oh so right.
Grace Delight
The Brownie Part
1 stick of butter
3 oz. of unsweetened chocolate
2 eggs
A cup of sugar
2/3 cup of flour
A pinch of salt
8 oz. of cream cheese
1/3 cup of sugar
1 egg
1/4 cup of peanut butter
Preheat the oven to 350°F and grease a pan. In 30-second increments, melt the butter and chocolate in the microwave until smooth. Let cool briefly before adding sugar, eggs, salt and flour, mixing thoroughly. Pour this batter into the pan. In a separate bowl, mix together the cream cheese, sugar, egg and peanut butter. Dollop the cheesecake on top of the brownie batter, swirling the two together gently. Bake for 30 minutes, until the center is just barely jiggling. Let this cool in the freezer while preparing part number two!
Part Two
1 stick of butter
1 cup of brown sugar
1 cup of powdered sugar
8 oz. chocolate chips
1/2 cup of flour
1 pinch of salt
Some peanut butter
Cream the butter, as much peanut butter as you like, and the sugars together until fluffy.
Add the flour and chocolate chips and stir to combine. Then, spread this lusciousness on top of the chilled peanut-butter cheesecake marbled brownies. Enjoy a hefty slice of Grace Delight.
